In Kawasaki City, we take necessary actions by requesting to submit the "Gakkoseikatsu Kanri Shidouhyo (check and guidance sheet for children's school life)" (for allergic conditions) prepared with doctor's diagnoses. The food that we cater to elimination diet is 7 specified raw materials (eggs, dairy, wheat, shrimp, crab, peanuts, and buckwheat) which are mandatory to be labeled, but no substitute food is prepared. Please know that school meals served in the elementary schools and the junior high schools in Kawasaki City do not contain crab, peanuts, and buckwheat.
At each school, for the families who have children with allergies to food, the principal, the assistant principal, the teacher in charge of the class, nursing teachers, nutrition educators, and nutrition teachers (nutritionists if the school have a supply center of school meals), and so on interview with the guardian, and they take care working with school meal cooks and school physicians.
At the elementary schools and the special support schools, in consideration of the facilities and equipment and personnel, each school determines the food items that they cater up to 7 food items mentioned above.
We minimize the menu ready for allergy as much as possible and cook. Therefore, we don't set up different menus or different cooking methods by each concerned ingredient. We prepare and serve only one dish without all the concerned ingredients that must be removed commonly to all applicable children with allergies.
Regarding the cooking method of the elimination diet of the schools with supply centers of school meals, it is cooked in a separate area in the supply center of school meals and packed in a special food container to be delivered to the schools.
For school meals served at night at high school evening classes, meals ready for elimination diet are not served, but the information on the ingredients causing allergies and so on is provided as needed.
